Michael Hendry is Head Chef at Llansantffraed Court Hotel, near Abergavenny in Monmouthshire. Originally from Ayrshire, he began his career as a chef aged 21, and moved to Wales in 2003 after being offered a position at the Michelin starred Crown at Whitebrook.
Mike was promoted through the brigade and was part of the team when the establishment was awarded a coveted Michelin Star in 2004. As Sous Chef he helped hold the star and has built up a wealth of experience in fine dining. When creating dishes, he is passionate about using local produce from trusted Welsh suppliers and the hotel’s very own large kitchen garden. He has recently devised new six or nine course tasting menus, which will be presented with carefully selected matched wines.
Since beginning his role at Llansantffraed Court in 2013, he has transformed the hotel’s dining room and celebration menus.
His menu includes cauliflower veloutè; smoked Brecon venison, garden beetroot and wye valley asparagus; wild flower honey, raspberries and pistachio.
Michael works with a team of experienced chefs to deliver a memorable fine dining experience, heavily influenced by his surroundings and proximity to some of the best Wales has to offer.
