Matthew Lewis, Head Chef at the Plas Derwen

Matthew Lewis became a Chef at age twenty at the Lamb and Flag Inn, Abergavenny. At twenty two he became Head Chef of this very busy and successful restaurant.

Matthew went on to attain NVQ level 3 and AAA Senior level with Cambrian Training. He was the first chef to complete the senior level in the UK.  In 2009 and again in 2010 Matthew won Brains Brewery Chef of the Year.

As part of a team he entered the International Culinary Championship and achieved a silver medal.  Mathew was part of a forum team that developed and implemented a Level 4 NVQ pilot qualification.

In 2013 Matthew moved to the Plas Derwen fine dining restaurant in Abergavenny where he has built up a strong and united team. This enables them to keep raising standards and customer experience, both of which Matthew is extremely passionate.

Most recently Matthew became a Champion Chef for Brains SA, troubleshooting in other establishments to raise their standards.
