Originally from Pontypool Matthew trained as a chef at Coleg Gwent in Cross Keys. In 2009 as a student Matthew competed in the television competition “Taste the Nation” as part of the Welsh team. In the first round he produced the winning dish for the Welsh team.
Once he had completed his course his first job was at the Star Inn, Llansoy a country pub in the glorious Monmouthshire countryside. Matthew spent three years at the Star Inn and helped to develop it into a destination pub.
Matthew is now Head Chef at the Castle Inn in the village of Usk. His menu combines fine dining and traditional pub dishes with a twist. He uses local produce from producers and suppliers in Monmouthshire, the food capital of Wales, to make dishes which showcase his talent.
